  • 1 cup shredded sharp cheddar cheese or your favorite cheese
  • ½ cup all-purpose flour
  • ¼ cup whole wheat flour optional for extra flavor
  • 2 tablespoons unsalted butter softened
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika optional
  • 1 teaspoon salt
  • Flaky sea salt for topping optional

    Prepare the Dough:

    • In a mixing bowl, combine sourdough discard, shredded cheese, all-purpose flour, whole wheat flour (if using), butter, garlic powder, paprika, and salt. Mix until a soft dough forms.

    Chill the Dough (Optional):

    • Wrap the dough in plastic wrap and refrigerate for 20 minutes to make it easier to roll out.

    Roll Out the Dough:

    • Preheat your oven to 350°F (175°C). Place the dough between two sheets of parchment paper and roll it out to about 1/8 inch thickness.

    Cut the Crackers:

    • Remove the top parchment sheet and transfer the dough (still on the bottom parchment) to a baking sheet. Use a pizza cutter or sharp knife to score the dough into square or rectangular cracker shapes.

    Add Toppings:

    • Brush the dough lightly with water or olive oil and sprinkle with flaky sea salt for added flavor.

    Bake the Crackers:

    • Bake for 18-20 minutes, or until the crackers are golden and crispy. Rotate the baking sheet halfway through for even baking.

    Cool and Serve:

    • Let the crackers cool completely on a wire rack before serving. Store in an airtight container.
